For the Chicken

skinless chicken breast, cut into chunks

dill pickle juice

whole milk
For the Breading

all-purpose flour

plain breadcrumbs

For Frying
Peanut oil or avocado oil
at least 1" deep in your frying pan
Instructions
Marinate the Chicken
Cut the chicken breast into nugget or strip-sized pieces.
In a large bowl, combine the dill pickle juice and whole milk.
Submerge the chicken pieces in the marinade.
Cover and refrigerate for 30 minutes to 2 hours.
Prepare the Breading
In a separate large bowl, mix the flour, breadcrumbs, powdered sugar, garlic powder, salt, paprika, baking powder, and black pepper.
Whisk the dry ingredients until well combined.
Breading and Frying
Remove chicken from the marinade, letting excess drip off.
Dredge each piece thoroughly in the breading mixture, pressing gently to ensure a good coating.
Heat oil to 350°F (175°C) in a deep pan or fryer.
Carefully place breaded chicken pieces into the hot oil.
Fry for 3-4 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
Remove and drain on a wire rack or paper towels.
