Ingredients

For the Chicken

  • 3 lbs boneless skinless chicken breast, cut into chunks
  • 1 cup dill pickle juice
  • ½ cup whole milk

For the Breading

  • 1 cup all-purpose flour
  • 1 cup plain breadcrumbs
  • 3 tbsp powdered sugar
  • 1 tbsp garlic powder
  • 2 tsp salt
  • 2 tsp paprika
  • 1 tsp baking powder
  • 1 tsp black pepper

For Frying

  • Peanut oil or avocado oil at least 1" deep in your frying pan

Instructions

Marinate the Chicken

  • Cut the chicken breast into nugget or strip-sized pieces.
  • In a large bowl, combine the dill pickle juice and whole milk.
  • Submerge the chicken pieces in the marinade.
  • Cover and refrigerate for 30 minutes to 2 hours.

Prepare the Breading

  • In a separate large bowl, mix the flour, breadcrumbs, powdered sugar, garlic powder, salt, paprika, baking powder, and black pepper.
  • Whisk the dry ingredients until well combined.

Breading and Frying

  • Remove chicken from the marinade, letting excess drip off.
  • Dredge each piece thoroughly in the breading mixture, pressing gently to ensure a good coating.
  • Heat oil to 350°F (175°C) in a deep pan or fryer.
  • Carefully place breaded chicken pieces into the hot oil.
  • Fry for 3-4 minutes per side, or until golden brown and internal temperature reaches 165°F (74°C).
  • Remove and drain on a wire rack or paper towels.
